Kale and Poached Eggs

Okay, I will admit it: I am addicted to poached eggs. This is a recent trend, as the first time I tried poached eggs was last weekend over brunch at The Cleveland. This past Saturday I went back to the small Soho eatery with Shannon and once again devoured the kale and poached eggs with a root vegetable lakte. Although this time, I added a mimosa (because what's brunch without a mimosa?).

After brunch Shannon and I grabbed coffee and dessert at Balthazar Bakery and continued to walk through Soho and eventually up through the West Village. The temperature was warmer than usual and the sun was blissfully shining. It was the type of Saturday that reminded me how much I love New York City.

Aside from a lovely Saturday brunch my weekend was pretty quiet. I spent a lot of time day dreaming of warmer weather and deciding which new recipe I wanted to try out. Last week, I was craving banana bread. So, I whipped up some whole wheat, dairy & sugar free banana bread. But, it wasn't quite right... it needed a kick. So, this Sunday I amped up the recipe with a heaping teaspoon of cinnamon and delectable dark chocolate chips. It tasted absolutely delicious, and I will be sure to save this recipe for the books.
